We just went through the big birthday month for our family. Four of our five grandkids have birthdays in February, along with my own birthday. Luke, who just turned 12, requested chicken fried steak for his dinner.  Jan was very pleased with that request!  When thinking about what vegetable to serve with the dinner that all the kids would love, I decided to try carrots roasted in our No Ho’s Hawaiian Café Sweet Chili-Yaki Sauce.  They were delicious and a big hit with the kids, not to mention very easy to pull together.

Sweet Chili-Yaki Carrots

Ingredients:

2 lbs carrots peeled and cut into sticks
4 Tblsp butter
1/2 cup No Ho’s Hawaiian Café Sweet Chili-Yaki Sauce

Directions:

Preheat oven to 400 degrees.

Place carrots in a heatproof dish or pan large enough to have carrots in a single layer. Dot with butter. Place pan in oven for about 5 minutes to melt butter. Remove from oven and add the Chili-Yaki Sauce.  Toss to coat. Place pan in oven and roast carrots for 45 minutes to an hour- until carrots are tender and coating starts to caramelize.
