It’s time to VOTE! And no, we’re not getting all political on you. We mean, it’s time to vote for your favorite SKINNY MAMA recipes! Our contestants need your help, because the top 10 recipes with the most votes (by March 7th) will be the ones WE get to judge for the finals. Here’s how it works:

- Check out our official contest page to view all contestants/entries. We’re also working on uploading ALL recipes to our Skinny Mama Pinterest Board too…make sure you follow it!

- Click “vote now” for your favorite submission. You may vote once per day.

- If the contestant has multiple recipe submissions within the entry, make sure to LEAVE A COMMENT telling us which one is your favorite.

- The 10 contestants with the most votes will have their recipe judged by the Saucy Mama panel for the finals. If a finalist contestant has submitted multiple recipes, we will judge the recipe with the most “votes” throughout the comments. [Note: If there's no clear "favorite" recipe for a finalist with multiple recipes, the Saucy Mama judging panel will select one].

 As recipe submissions are flowing in for our Skinny Mama Contest, I started looking back at recipes from our very first contest a few years ago.  With new products always coming out, we sometimes forget about these “oldies” (but goodies!), like our Parmesan Garlic.  So I found this recipe from Rachel Whitener and decided it must be shared! With just four ingredients, this could be an easy-peasy weekend meal…yummy! 

Ingredients:

2 boneless skinless chicken breasts (best if sliced thin or pounded down)
¼ cup Saucy Mama Parmesan Garlic Marinade
2 thin strips prosciutto
½ lemon

 Directions:

Trim excess fat off chicken breasts. Place in a shallow container or zip-top bag. Add marinade and turn over or toss to coat. Let sit in refrigerator for at least 30 minutes.

Heat oven to 400 degrees. Place chicken in a small baking dish (do not pour rest of marinade over chicken, as any excess in the pan will burn during cooking). Take a slice of prosciutto and lay over the top of each breast so that it ripples. Place chicken on center rack of oven and roast for about 30 minutes, or until prosciutto is cooked and chicken is done in the center. Do not overcook. Cut lemon into wedges and serve alongside chicken or squeeze over top.

Hey everyone, Colette here! As we mentioned a few weeks ago on our Facebook page, Barhyte Specialty Foods won Pendleton’s Business of the Year (BotY)  for 2011. While many of the locals understand and appreciate the award as a huge honor, I decided it would be helpful to get some understanding about what this award really means. I asked, of course, Suzie’s dear friend, MaryAlice, and received some information I’d like to share:

Someone must sponsor the company’s nomination, which is kept totally secret from the company. Then anyone that is connected to the business is asked to write a letter of support that says why the business should win and why they are deserving. Barhyte has a binder full of the sweetest letters from friends and the community; most focus on reasons such as the family business aspect, the impact on the Pendleton community, and generosity/giving back. This packet of letters, forms, and any other interesting information is given to the Chamber, who selects a top-secret 5 person committee to judge all the awards for the year. There are other fantastic ones as well, such as Man and Woman of the Year.

In the words of MaryAlice: “Putting together the packet for Barhyte Specialty Foods was easy – they have touched many, many people, groups, organizations, and other businesses in town, that everyone was happy to write a supporting letter.  It was good too, that their employees joined in.  They all had good things to say about their employer.” The BotY award has been given since 1996, and Barhyte is absolutely thrilled to have been chosen. We’re so thankful that we have such loyal supporters- you guys ROCK!
