This flavorful meal recipe comes to us from Jennifer Daskevich at A Little Gourmet Everyday as part of our Fab With Five Recipe Challenge. So other than the healthy factor, it’s easy to make also! Two thumbs up for that! What are your New Years resolutions?  

Ingredients:

1 fennel bulb
2 medium shallots
2 Cups Green Beans
2 tablespoons + 1 teaspoon olive oil
Fresh ground pepper
Kosher salt
1/2 pound shrimp, peeled and deveined (31-40 count)
1/4 cup Saucy Mama Pacific Rim Ginger Dressing

Directions:

Preheat oven to 400 degrees. Cut stem off fennel and remove core. Slice into thin slices. Peel shallot and cut into rings. Remove stringy end of green bean. In medium bowl combine one tablespoon olive oil with fennel and salt and pepper. Spread on foil lined cookie sheet and put in oven. In same bowl combine shallots with 1 tablespoon olive oil and salt and pepper. When fennel has begun to crisp on the edges, combine shallots with fennel and roast until all vegetables are crispy – about another 20 minutes.

Meanwhile, in a medium bowl lightly season shrimp with salt and pepper and combine with 2 tablespoons Saucy Mama Pacific Rim Ginger Sauce and set aside.

Fill a large pot with about 1 inch of water and place steamer insert in bottom of pan. Bring water to a boil and place green beans in steamer and put lid on pot. Steam for about 3 minutes. While beans are steaming prepare an ice bath in a large bowl. When the beans have steamed for three minutes immediately plunge them into ice bath.

Heat 1 teaspoon of olive oil in large skilled over high heat. Put shrimp in pan and reduce heat to medium. Cook shrimp for about 90 seconds on first side then turn and cook for an additional 90 seconds to two minutes. Be sure not to overcook shrimp.

Remove shrimp from pan, put in green beans and cook to heat through. Add 2 tablespoons Saucy Mama Pacific Rim Ginger Dressing. Add in roasted fennel and shallots. Remove to platter and top with shrimp.
