Since we’re prepping for Super Bowl parties, here is an easy, party friendly recipe for steamed artichokes and a delicious chipotle dip. Most people just use butter for flavoring artichokes, but this creative recipe raises the bar. Submitted to us by Sommer Collier at A Spicy Perspective, this recipe is also one that is healthier for you (in terms of party food that keeps you constantly munching!), as the Chipotle Mustard only contains 5 calories per serving. Not bad, I’d say! Sommer has some other great party recipes on her blog, so make sure to check those out as well!
Chipotle Aioli with Steamed Artichokes
This aioli (Provencal-style dipping sauce) was made with Saucy Mama Chipotle Mustard. It is a fabulous sauce for nearly ANY party food including: oven fries, plantain chips, raw veggies, and crostini. My favorite way to eat it is with steamed artichoke leaves!
2 tablespoons Saucy Mama’s Chipotle Mustard
¾ cup mayonnaise
1 garlic clove, minced
¼ tsp. salt
¼ tsp. ground pepper
2-4 large artichokes
Half a lemon
Set a steam basket over a large stock pot filled with 2 cups of water. Cover and place over high heat.
To trim the artichokes: Cut the stems off the artichokes. Then cut about 1 inch off the tops of each. Pull any rough or loose leaves off the bottom. Using kitchen shears, cut the tips off of every leaf around each artichoke.
Rub the artichokes with a half of a lemon so the cut edges don’t brown. Place them in the steam basket and cover for one hour—or until the leaves are tender and pull off easily. You may need to add extra water half way through!
Meanwhile, stir the Chipotle Mustard with mayonnaise, garlic, salt and pepper. Mix well.
To eat: Pull the artichokes leaves off, and dip them into the aioli. Use your teeth to scrape the “meat” off each leaf, discard the rest!
Alright, football fans, we’ve got less than two weeks until the Super Bowl! That means we need to start planning for upcoming Super Bowl parties- my favorite! Here’s an awesome recipe submitted to us from Paula at Dishing The Divine. What I love about these Hot Wing Melts is that they are super simple to make, and they are packed full of flavor (I really love blue cheese, so these are perfect for me). If you’re not a huge fan of blue cheese, you could substitute a different kind of cheese; I think pepper jack would be delicious also! In either case, these little guys are great for a party.

Hot Wing Melts
1/4 cup vegetable oil
6 medium chicken breasts
1 cup Saucy Mama’s Hot Wing Sauce
16 slices White Bread
4 tbsp salted butter
12 oz blue cheese crumbles
Place half the oil in a pan heated to medium high and fry three of the chicken breasts until cooked through, flipping as needed. Repeat with the remaining oil and the remaining three chicken breasts.
Pat the chicken dry and cut each breast into ¼-inch slices. Toss the chicken slices in Saucy Mama’s Hot Wing Sauce and set aside. Butter one side of each slice of bread.
Preheat a non-stick skillet over medium heat. Lay the buttered side of a slice on the skillet and top with chicken slices and blue cheese. On top of the cheese, immediately place another bread slice with the butter side up. Cover the skillet. When the bread is golden brown and cheese is melted, flip the sandwich and continue to cook, covered, until the second side is also golden brown and cheese is melted. Let the sandwiches cool for 1 minute and then cut into quarters and serve hot.
Here’s a recipe that features a classic snack or perfect party munchie: chicken strips. Except these chicken strips have a special touch- and that would have to be the delicious combination of flavors from pistachio and our Saucy Mama Sweet Onion Marinade. And these don’t have to be just a snack; they can easily be turned into a quick dinner that even the kids will like! Pistachio-Crusted Sweet Onion Chicken Strips
Preparation Time: 10 minutes, Cooking Time: 10 minutes
1 lb boneless, skinless chicken breast halves, cut into thin strips
1/4 c Saucy Mama’s Sweet Onion Marinade
2 c pistachios, finely chopped
1/4 c grated Parmesan cheese
1 tsp dried parsley
1/4 tsp black pepper
1/4 c vegetable oil, or as needed for frying
1 clove garlic, minced
Marinate the chicken strips in the Saucy Mama Sweet Onion Marinade for at least a half hour.
In a large shallow bowl, combine the chopped pistachios, Parmesan, parsley and pepper. Coat the chicken strips in the pistachio mixture and set aside.
In a large skillet, heat the oil over medium-high heat. Add garlic, stirring until it becomes fragrant. Add the chicken to the skillet. Cook until chicken is cooked through, about 3 to 5 minutes per side.
Serve with Saucy Mama Sweet Onion Marinade as a dipping sauce. Enjoy!
